{"id":49640,"date":"2015-05-19T00:00:00","date_gmt":"2015-05-18T22:00:00","guid":{"rendered":"https:\/\/www.santpol.edu.es\/albert-adria-y-los-microvegetales-de-koppert-cress-premian-al-mejor-cocinero-joven-de-catalunya\/"},"modified":"2023-05-19T09:48:00","modified_gmt":"2023-05-19T07:48:00","slug":"albert-adria-y-los-microvegetales-de-koppert-cress-premian-al-mejor-cocinero-joven-de-catalunya","status":"publish","type":"post","link":"https:\/\/www.santpol.edu.es\/ca\/blog\/albert-adria-y-los-microvegetales-de-koppert-cress-premian-al-mejor-cocinero-joven-de-catalunya\/","title":{"rendered":"Albert Adri\u00e0 i els microvegetals de Koppert Cress premien al Millor Cuiner Jove de Catalunya"},"content":{"rendered":"<div>\n<div>Ahir vam celebrar la<strong> XXXVI Jornada Universit\u00e0ria de Gastronomia<\/strong>, esdeveniment que engloba el <strong>Concurs de Cuina Jove de Catalunya<\/strong>, que aquest any ha assolit la seva XXIX edici\u00f3.<\/div>\n<div>\nAquest any les propostes gastron\u00f2miques dels finalistes hav\u00eden d&#8217;incloure\u00a0<strong>microvegetals de Koppert Cress<\/strong>,\u00a0i a m\u00e9s de la presentaci\u00f3 i qualitat en la elaboraci\u00f3 de les propostes, el jurat ha valorat la forma en que els joves explic\u00e0ven el seu plat i el que ha percebut el jurat al tastar-lo.<\/div>\n<div>\n<strong>El President del Jurat d&#8217;aquesta edici\u00f3 ha estat el xef Albert Adri\u00e0<\/strong>, que va deliberar els premiats amb la resta del Jurat:\u00a0Ramon Serra (Presidente del Consejo de Direcci\u00f3n de EUHT StPOL), Joan Ras (Presidente de la Academia Catalana de Gastronom\u00eda), Joaquim Maj\u00f3 (delegat del Rector de l&#8217;Universitat de Girona), Annette Abstoss (de l&#8217;empresa Koppert Cress), Diane Dodd (Presidenta de IGCAT) i Fernando Toda (de la publicaci\u00f3 Saber y Sabor).<\/div>\n<div>\nLa proposta guanyadora que ha obtingut el<strong> Premi Absolut<\/strong> ha estat <strong>&#8220;Primavera de brots&#8221;<\/strong> d&#8217;Ana Luna Vera Grimaldos de l&#8217;Escola Universit\u00e0ria d&#8217;Hostaleria i Turisme CETT-UB, que segons el jurat ha construit el plat des dels microvegetals i no \u00fanicament utilitzant-los com un complement, fet que ha estat tamb\u00e9 galardonat com el <strong>Premi de la Millor Aplicaci\u00f3 dels Microvegetals<\/strong>.<\/div>\n<div>\nEl <strong>Premi a la Destresa i Millor T\u00e8cnica d&#8217;Elaboraci\u00f3<\/strong> ha sigut el Plat <strong>&#8220;Esfera de microvegetals&#8221;<\/strong> de Mohamed Quauch del Restaurant Soldemar. El <strong>Premi a la Imaginaci\u00f3 i Creativitat<\/strong> se l&#8217;ha emportat una original proposta, el plat <strong>&#8220;Pop en Corall&#8221;<\/strong> de Diego Alejandro Romero, estudiant del <a href=\"http:\/\/santpol.edu.es\/\/oferta-academica\/master-en-artes-culinarias-y-direccion-de-cocina\/?lang=ca\" target=\"_blank\" rel=\"noopener noreferrer\">M\u00e0ster en Arts Culin\u00e0ries i Direcci\u00f3 de Cuina<\/a> a l&#8217;EUHT StPOL. I finalment, el <strong>Premi a la Millor Presentaci\u00f3<\/strong> ha sigut pel plat <strong>&#8220;Kokotxa a la basca&#8221;<\/strong> d&#8217;Annuar El Mardi de l&#8217;escola JOVIAT.<\/div>\n<\/div>\n<p>&nbsp;<\/p>\n<div><\/div>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone wp-image-7905\" src=\"http:\/\/santpol.edu.es\/\/wp-content\/uploads\/2015\/09\/0-nl-P1120493-300x225.jpg\" alt=\"0-nl-P1120493\" width=\"469\" height=\"352\" \/><\/p>\n<div>Amb el <strong>Concurs de Cuina Jove de Catalunya<\/strong>, l&#8217;Escola Universit\u00e0ria d&#8217;Hoteleria i Turisme de Sant Pol de Mar (EUHT StPOL) vol promocionar als joves valors que surten de les aules dels centres de formaci\u00f3 a Catalunya, molts dels quals despr\u00e9s de la seva formaci\u00f3 universit\u00e0ria acaben a les cuines dels restaurants amb estrelles Michelin. De fet, al finalitzar l&#8217;acte, va tenir lloc la pr\u00f2pia <strong>Jornada Universit\u00e0ria de Gastronomia<\/strong>, on l&#8217;Albert Adri\u00e0, junt amb el seu equip van presentar la sessi\u00f3<strong> &#8220;els llenguatges de la creativitat&#8221;<\/strong> en que Fran Agudo (Cap de cuina de TICKETS), Jorge Mu\u00f1oz (Cap de cuina de PAKTA) i Paco M\u00e9ndez (Cap de cuina Hoja Santa-Ni\u00f1o Viejo) van fer una demostraci\u00f3 de cuina aplicada als microvegetals. Al finalitzar la sessi\u00f3, Albert Adri\u00e0 va convidar als estudiants a postular per una pla\u00e7a de pr\u00e0ctiques en alguns dels restaurants del seu grup, TICKETS (1 estrella Michelin), PAKTA (1 estrella Michelin), Hoja Santa-Ni\u00f1o Viejo i Bodega 1900.<\/div>\n<p>&nbsp;<\/p>\n<div>\n<p><a href=\"http:\/\/santpol.edu.es\/\/wp-content\/uploads\/2015\/09\/nl-P1120540.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone wp-image-7907\" src=\"http:\/\/santpol.edu.es\/\/wp-content\/uploads\/2015\/09\/nl-P1120540-300x225.jpg\" alt=\"nl-P1120540\" width=\"477\" height=\"357\" \/><\/a><\/p>\n<\/div>\n<div>\n<div><a href=\"http:\/\/bit.ly\/1INY8ku\" target=\"_blank\" rel=\"noopener noreferrer\">Veure les fotos al Flickr<\/a><\/div>\n<div>\nI aqu\u00ed el <a href=\"http:\/\/bit.ly\/1PH4BU1\" target=\"_blank\" rel=\"noopener noreferrer\">v\u00eddeo-res\u00fam<\/a> del concurs, on l&#8217;Albert Adri\u00e0 (President del Jurat del concurs) ens explica tot all\u00f2 que cal saber apart de saber cuinar un bon plat.
