{"id":49696,"date":"2014-11-06T00:00:00","date_gmt":"2014-11-05T23:00:00","guid":{"rendered":"https:\/\/www.santpol.edu.es\/extracte-del-salo-hostelco-i-forum-gastronomic\/"},"modified":"2014-11-06T00:00:00","modified_gmt":"2014-11-05T23:00:00","slug":"extracte-del-salo-hostelco-i-forum-gastronomic","status":"publish","type":"post","link":"https:\/\/www.santpol.edu.es\/ca\/blog\/extracte-del-salo-hostelco-i-forum-gastronomic\/","title":{"rendered":"Extracte del Sal\u00f3 Hostelco i F\u00f2rum Gastron\u00f2mic"},"content":{"rendered":"<div class=\"row\">\n<div class=\"col-md-12 col-lg-12 content\">\n<div id=\"item\">\n<p>Els passats dies del 20 al 23 d&#8217;Octubre es va celebrar a la ciutat de Barcelona la\u00a0<strong>17\u00aa edici\u00f3 del sal\u00f3 Hostelco, dedicat a l&#8217;hosteler\u00eda i a la restauraci\u00f3.\u00a0<\/strong>La gran cita bienal va ser innaugurada per Felip Puig, conseller d&#8217;Empresa i Ocupaci\u00f3 i va assegurar que &#8220;Catalunya \u00e9s un referent en el sector de la restauraci\u00f3 i l&#8217;hosteleria&#8221; i que aix\u00f2 &#8220;<strong>contribueix a enfortir la ind\u00fastria tur\u00edstica, que \u00e9s una de les m\u00e9s potents del pa\u00eds<\/strong>&#8220;.<\/p>\n<p>Per primera vegada en aquesta edici\u00f3 es van organitzar de manera simult\u00e0nia el sal\u00f3 i el\u00a0<strong>F\u00f2rum Gastron\u00f2mic\u00a0<\/strong>i Bar F\u00f2rum amb l&#8217;objectiu de\u00a0<strong>crear la plataforma m\u00e9s gran insternacional de la ind\u00fastria,\u00a0<\/strong>que va incloure tota la cadena de valor del sector, des de l&#8217;equipament fins la elaboraci\u00f3 del producte. Ambd\u00f3s esdeveniments van conformar la Barcelona HostingWeek, que va aspirar a convertir la ciutat condal en &#8220;un referent obligat per la ind\u00fastria culin\u00e0ria&#8221;.<\/p>\n<p>En aquesta edici\u00f3 van participar 500 empreses, el 25% dels quals s\u00f3n internacionals i proced\u00eden de pa\u00efssos com Italia, Portugal, Alemanya, Turquia i Regne Unit. Jordi Roure, president d&#8217;Hostelco i de la Federaci\u00f3 Espa\u00f1ola d&#8217;Associacions de Fabricants i Maquin\u00e0ria per Hosteleria, Colectivitats i Ind\u00fastries Afins (FELAC), va assegurar que &#8220;Hostelco \u00e9s una cita ineludible pels professionals d&#8217;un sector capa\u00e7 de reinventar-se i innovar per seguir sent competitius tant a nivell nacional com internacional, com ho demostra la quota exportadora del 46% de la ind\u00fastria espanyola d&#8217;equipament per hosteleria&#8221;.<\/p>\n<p>Aquest any el sal\u00f3 va dissenyar una nova distribuci\u00f3 d&#8217;expositors per sectoritzaci\u00f3: per una banda el pavell\u00f3 3 agrupava tota la\u00a0<strong>maquin\u00e0ria i equipament<\/strong>, i dins d&#8217;aquest segment es podien visitar els espais dedicats al caf\u00e8, bugader\u00eda, tintoreria, higi\u00e8ne i neteja en general; aix\u00ed com m\u00e0quines i serveis de vending. A aquesta tradicional oferta\u00a0<strong>es van sumar per primera vegada la forneria, pastisser\u00eda i gelateries i<\/strong>\u00a0les franqu\u00edcies i el fitness. Les novetats de producte i possibilitats d&#8217;aquestes noves \u00e0rees es van exposar al pavell\u00f3 2, junt amb els sector <strong>servei de t\u00e8xtil, mobiliaris i decoraci\u00f3; wellness; t\u00e8xtils i uniformes; i serveis de gesti\u00f3, control, inform\u00e0tica i seguretat i<\/strong>\u00a0el pavell\u00f3 1 estava m\u00e9s enfocat al m\u00f3n gastron\u00f2mic:\u00a0<strong>alimentaci\u00f3 i begudes<\/strong><\/p>\n<p><strong>El F\u00f2rum Gastron\u00f2mic<\/strong><\/p>\n<p>El F\u00f2rum, creat al 1999, va ser el\u00a0<strong>primer congr<\/strong><strong>\u00e9s de la gastronomia amb fira de productes a Espan<\/strong><strong>ya<\/strong>\u00a0i es celebra anualment alternant com seus Gal\u00edcia i Catalunya. S&#8217;ha convertit en el congr\u00e9s pioner d&#8217;enogastronomia a Espanya i celebra aquest any el seu 15\u00e8 aniversari. Va agrupar a un centenar de ponents, a m\u00e9s de 200 empreses participants i el pa\u00eds convidat va ser Mexic.<\/p>\n<p>En el F\u00f2rum Gastron\u00f2mico es van programar m\u00e9s de 80 sessions, entre pon\u00e8ncies i tallers, a c\u00e0rreg dels\u00a0<strong>millors cuiners de Catalunya<\/strong>, com\u00a0Carme Ruscalleda (Sant Pau), Joan i Jordi Roca (El Celler de Can Roca), Jordi Cruz (\u00c0bac), Paco P\u00e9rez (Miramar), Nandu Jubany (Can Jubany), els germans Sergio y Javier Torres (Dos Cielos) i Carles Gaig (Gaig) entre altres. Tamb\u00e9 xefs de la resta d&#8217;Espanya com \u00a0Dani Garc\u00eda (Dani Garcia Restaurante), \u00c1ngel Le\u00f3n (Aponiente), Eneko Atxa (Azurmendi) i Sacha Hormaechea (Sacha).<\/p>\n<p><strong>Mexic, com a territori convidat en aquesta edici\u00f3<\/strong>, va tenir la pres\u00e8ncia de Jorge Vallejo (Quintonil), Jos\u00e9 Ram\u00f3n Castillo (Que bo! Chocolates), Mikel Alonso (Biko), Daniel Ovadia (Pacia), Carmen Ram\u00edrez Degollado &#8216;Titita&#8217; (El Baj\u00edo) i Joan Bagur, que ha portat els sabors mexicans a Barcelona amb el restaurant Oaxaca.<\/p>\n<p>La programaci\u00f3 es va completar amb les activitats del F\u00f2rum Vi, F\u00f2rum Empresa i F\u00f2rum Ciutat, als que aquest any es vam sumar, en col\u00b7laboraci\u00f3 amb Hostelco,\u00a0&#8220;Cook Trends&#8221; un &#8220;food court&#8221; a l&#8217;estil americ\u00e0 que van exhibir les \u00faltimes tend\u00e8ncies de la cuina de carrer de qualitat.<\/p>\n<p>A m\u00e9s, es va desenvolupar la quarta edici\u00f3 del premi\u00a0<strong>Cuiner de l&#8217;Any<\/strong>, al que <a href=\"http:\/\/santpol.edu.es\/albert-ortiz-guanya-el-premi-cuiner-de-lany-2014\/?lang=ca\" target=\"_blank\" rel=\"noopener noreferrer\">Albert Ortiz (ex-alumne de EUHT StPOL) va resultar guanyador del certamen.<\/a><\/p>\n<p>No nom\u00e9s aix\u00f2, a m\u00e9s a m\u00e9s a Hostelco es van premiar als\u00a0<strong>millors projectes en hoteleria, restauraci\u00f3 i producte<\/strong>, guardonant a vuit projectes.
