Imparteix sessions de cuina i alimentaci\u00f3 healthy o saludable al m\u00f2dul sobre coneixement de producte i t\u00e8cniques culin\u00e0ries del M<a href=\"https:\/\/santpol.edu.es\/ca\/master-en-arts-culinaries-i-direccio-de-cuina\/\" target=\"_blank\" rel=\"noopener noreferrer\">\u00e0ster en Arts Culin\u00e0ries i Direcci\u00f3 de Cuina<\/a> de l&#8217;EUHT StPOL. &#8220;L\u2019alimentaci\u00f3 healthy i la cuina creativa s\u00f3n totalment compatibles i el en m\u00e0ster ho demostrem&#8221;, apunta Anglada. En les seg\u00fcents l\u00ednies compartim una entrevista realitzada a la xef durant les sessions d&#8217;alimentaci\u00f3 i cuina saludable impartides a l&#8217;EUHT StPOL (Barcel<\/strong>ona).[\/vc_column_text][vc_separator][vc_column_text]<strong>Qu\u00e8 \u00e9s all\u00f2 que no sabem de la cuina healthy o saludable?<\/strong><\/p>\n<p>D&#8217;entrada, quan pensem en cuina saludable solem pensar que es tracta del t\u00edpic bistec a la planxa amb verdures. A les sessions de cuina healthy o saludable intento transmetre a l&#8217;alumnat com cuinar amb ingredients saludables i quines s\u00f3n les millors t\u00e8cniques de cocci\u00f3. Per exemple: fem servir ingredients com el blat sarra\u00ed i cereals integrals amb els que no solen haver treballat i elaborem des de bunyols fins a creps o hamburgueses, entre d&#8217;altres.<\/p>\n<p>A m\u00e9s, tractem tamb\u00e9 la part emocional de l&#8217;alimentaci\u00f3 de manera que l&#8217;alumnat s&#8217;adona de la import\u00e0ncia que pot tenir cada aliment a nivell neuronal o f\u00edsic, entre d&#8217;altres.<\/p>\n<p><strong>La cuina saludable \u00e9s nom\u00e9s una tend\u00e8ncia?<\/strong><\/p>\n<p>\u00c9s una tend\u00e8ncia que es quedar\u00e0. Els grans xefs ja estan involucrats en aquest assumpte de manera que crec que no nom\u00e9s podem parlar d&#8217;una tend\u00e8ncia passatgera. Som el que mengem, diuen. \u00c9s a dir, la cuina \u00e9s una q\u00fcesti\u00f3 de responsabilitat amb la salut, per\u00f2 \u00e9s tamb\u00e9 una forma d&#8217;oci, de plaer per al comensal. En aquest sentit, opino que la cuina saludable no \u00e9s una cosa avorrida, sin\u00f3 que l\u2019alimentaci\u00f3 healthy i la cuina creativa s\u00f3n totalment compatibles i en el m\u00e0ster ho demostrem.<\/p>\n<p><strong>Que els grans xefs s&#8217;aline\u00efn amb la cuina saludable \u00e9s o ser\u00e0 suficient perqu\u00e8 arribi a les llars?<\/strong><\/p>\n<p>\u00c9s un pas m\u00e9s. Encara hi ha molta menjar r\u00e0pid per\u00f2 a poc a poc anem veient que a nivell mundial s&#8217;estan fent passos en aquest sentit: utilitzar m\u00e9s productes vegans, per exemple. Tamb\u00e9 \u00e9s un tema relacionat amb el medi ambient: l&#8217;ab\u00fas en el consum de carn est\u00e0 tenint molts efectes negatius a nivell planetari i ja hi ha grans empreses que s&#8217;estan posicionant molt seriosament cap a les noves tend\u00e8ncies d&#8217;alimentaci\u00f3 i menjar healthy. Hi ha una consci\u00e8ncia general que a poc a poc es va consolidant.<\/p>\n<p><strong>Menjarem m\u00e9s segons les propietats beneficioses de cada aliment o b\u00e9 per les sensacions que ens generi el sabor d&#8217;un plat?<\/strong><\/p>\n<p>Crec que seguirem menjant des d\u2019una vessant organol\u00e8ptica per\u00f2 amb consci\u00e8ncia. Per exemple: no \u00e9s el mateix cuinar mongetes tendres durant 3-5 minuts que durant 10 o 15 minuts perqu\u00e8 tenen m\u00e9s minerals, m\u00e9s vitamines, mantene les fibres&#8230; En definitiva, es tracta d&#8217;usar una bona t\u00e8cnica de cocci\u00f3 i aplicar-la en un plat. Si tots meng\u00e9ssim di\u00e0riament el 50% del plat en verdures no hi hauria problemes amb l&#8217;alimentaci\u00f3.<\/p>\n<p><strong>Per qu\u00e8 \u00e9s important que un alumne del m\u00e0ster tingui coneixements sobre cuina healthy?<\/strong><\/p>\n<p>L&#8217;alimentaci\u00f3 i cuina saludable s\u00f3n el futur. Quan finalitzen les sessions d&#8217;alimentaci\u00f3 saludable del m\u00e0ster, els alumnes tenen les eines necess\u00e0ries per cuinar per a cel\u00edacs, per a intolerants a la lactosa o per al\u00b7l\u00e8rgics a l&#8217;ou o a altres aliments; un fet que cada vegada est\u00e0 m\u00e9s a l&#8217;ordre del dia en restaurants i cuines.
