Quines estrat\u00e8gies seran m\u00e9s efectives per aconseguir major rendibilitat del negoci de Food and Beverage? Quines propostes de valor podrem oferir als client d&#8217;un restaurant a l&#8217;escenari posterior a la Covid-19? Aquestes i altres preguntes van ser resoltes al <a href=\"https:\/\/santpol.edu.es\/webinars\/restaurantes-post-covid19-mas-eficientes\" target=\"_blank\" rel=\"noopener noreferrer\">webinar<\/a> &#8220;Els restaurants despr\u00e9s de la Covid-19&#8221; en qu\u00e8 van participar Sergio Mellado, director corporatiu de F &amp; B de Catalonia Hotels, membre del \u201cClub Top F&amp;B\u201d i antic alumne de l\u2019EUHT StPOL; Llu\u00eds Cod\u00f3, professor de l&#8217;EUHT StPOL expert en HORECA i coordinador de Formaci\u00f3 in Company de l\u2019EUHT StPOL i Llu\u00eds Serra, director general de l0EUHT StPOL i president d\u2019EUHOFA International.<\/strong>[\/vc_column_text][vc_separator][vc_column_text]<\/p>\n<h2><strong>La import\u00e0ncia del F&amp;B en un hotel<\/strong><\/h2>\n<p>Sergio Mellado va obrir el webinar destacant la import\u00e0ncia del departament de F &amp; B en un hotel: &#8220;\u00c9s un factor diferencial i t\u00e9 una import\u00e0ncia capital: no nom\u00e9s ajuda a incrementar l&#8217;ocupaci\u00f3 de l&#8217;establiment hoteler sin\u00f3 que tamb\u00e9 <strong>ajuda a millorar la reputaci\u00f3 i el prestigi de la marca<\/strong>&#8220;. Per tant, considera que cal analitzar el departament de F &amp; B per la <strong>rendibilitat<\/strong> dels espais, per\u00f2 tamb\u00e9 en funci\u00f3 de les aportacions a l&#8217;establiment hoteler.<\/p>\n<p>En relaci\u00f3 amb la <strong>gesti\u00f3 de l&#8217;\u00e0rea de F &amp; B en hotels<\/strong>, Llu\u00eds Cod\u00f3 va apuntar que la seva complexitat ha condu\u00eft en els \u00faltims anys a la uni\u00f3 de grups de restauraci\u00f3 amb grans companyies hoteleres per oferir i gestionar el servei de restauraci\u00f3. Com a avantatge: fer m\u00e9s f\u00e0cil la gesti\u00f3 del restaurant per una empesa externa especialitzada en aquest concepte. El risc: perdre el control del proc\u00e9s, de l&#8217;experi\u00e8ncia del client. &#8220;Cal negociar b\u00e9 l&#8217;acord&#8221;, ha apuntat Mellado.<\/p>\n<p>[\/vc_column_text][vc_column_text]<\/p>\n<h2><strong>Estrat\u00e8gies per millorar la rendibilitat dels restaurants despr\u00e9s de la Covid-19<\/strong><\/h2>\n<p>Segons Cod\u00f3, la reobertura dels restaurants despr\u00e9s de la Covid-19 ha d&#8217;estar focalitzada en l&#8217;adaptaci\u00f3 en tres \u00e0rees per millorar la rendibilitat del negoci. Els tres aspectes b\u00e0sics a tenir en compte s\u00f3n:<\/p>\n<ol>\n<li><strong>Transpar\u00e8ncia en la comunicaci\u00f3 externa<\/strong>: explicar com treballem i parlar de detalls com protocols d&#8217;higiene, seguretat i neteja ser\u00e0 fonamental per v\u00e8ncer la por del client a venir.<\/li>\n<li><strong>Operacions:<\/strong> els condicionants del nou escenari post Covid-19 faran necessari un redisseny de tot el que passa dins del restaurant des del moment en qu\u00e8 entra un client al restaurant fins que en surt.<\/li>\n<li><strong>Gesti\u00f3 dels recursos econ\u00f2mics<\/strong> i readaptaci\u00f3 a el nou escenari amb estrat\u00e8gies com ara limitar l&#8217;oferta de restaurant, analitzar la gesti\u00f3 de costos i optimitzar els marges de venda. &#8220;Si redu\u00efm la carta i l&#8217;aforament \u00e9s m\u00e9s limitat, no t\u00e9 sentit reduir preus perqu\u00e8 els marges cauran. Caldr\u00e0 analitzar l&#8217;oferta del restaurant i plantejar-nos com mantenir o incrementar els marges&#8221;.<\/li>\n<\/ol>\n<p><strong>&#8220;La crisi \u00e9s una oportunitat per millorar&#8221;<\/strong> va indicar Mellado i va recomanar &#8220;abans de res, aplicar el sentit com\u00fa&#8221;. Com a estrat\u00e8gies per fer front al nou escenari posterior a la Covid-19, va afegir algunes recomanacions:<\/p>\n<ul>\n<li><strong>Ampliar els horaris<\/strong> de cuina i de servei per lluitar contra la limitaci\u00f3 d&#8217;aforament.<\/li>\n<li>No baixar els preus sin\u00f3 &#8220;<strong>augmentar el valor del plat<\/strong>&#8221; i comptar amb cartes m\u00e9s curtes i limitades, amb productes de temporada i de proximitat.<\/li>\n<li>Eliminar costos superflus i <strong>optimitzar la productivitat<\/strong>. Treballar la venda suggerida, l\u2019anomenat<\/li>\n<li>Utilitzar la <strong>tecnologia<\/strong> com a element d&#8217;ajuda en la gesti\u00f3.<\/li>\n<\/ul>\n<p>[\/vc_column_text][vc_column_text]<\/p>\n<h2><strong>Propostes de valor per oferir als client d&#8217;un restaurant<\/strong><\/h2>\n<p>&#8220;El client est\u00e0 disposat a tornar, aquest \u00e9s el gran avantatge&#8221;, ha apuntat Cod\u00f3. I en aquest sentit, tant ell com Mellado van detallar algunes propostes de valor per oferir als clients dels restaurants en l&#8217;escenari de despr\u00e9s de la Covid-19:<\/p>\n<ul>\n<li>Ser\u00e0 b\u00e0sic transmetre <strong>seguretat i confian\u00e7a<\/strong> al client i a m\u00e9s de la transpar\u00e8ncia en la comunicaci\u00f3, <strong>el servei tindr\u00e0 un paper fonamental<\/strong>.<\/li>\n<li><strong>Donar-li import\u00e0ncia a l&#8217;entorn:<\/strong> &#8220;Qualsevol concepte gastron\u00f2mic ha de tenir una hist\u00f2ria al darrere, qualsevol negoci hoteler ha d&#8217;estar mimetitzat amb el seu entorn i qualsevol negoci de restauraci\u00f3 dins d&#8217;un hotel ha de ser atractiu per als clients locals&#8221;, va comentar Mellado. <strong>La personalitat pr\u00f2pia i el relat de la marca<\/strong> ser\u00e0 fonamental per diferenciar-se de la compet\u00e8ncia.<\/li>\n<li>Cercar la <strong>qualitat<\/strong> en tots els detalls: implementar no nom\u00e9s sistemes de gesti\u00f3 i control econ\u00f2mic, sin\u00f3 tamb\u00e9 de qualitat.<\/li>\n<li>Valorar sumar-se al <strong>take away i delivery<\/strong> per guanyar liquiditat en els negocis de restauraci\u00f3, essent conscients que abans d&#8217;activar aquesta part del negoci, cal dissenyar processos, definir preus, protocols, etc.<\/li>\n<li>Apostar per la <strong>formaci\u00f3<\/strong> dels equips humans: en seguretat i higiene, per\u00f2 tamb\u00e9 en altres \u00e0mbits que seran necessaris en el nou escenari post Covid-19.<\/li>\n<\/ul>\n<p>[\/vc_column_text][vc_column_text]Recupera el webinar <a href=\"https:\/\/santpol.edu.es\/webinars\/restaurantes-post-covid19-mas-eficientes\" target=\"_blank\" rel=\"noopener noreferrer\">aqu\u00ed.<\/a>[\/vc_column_text][vc_video link=&#8221;https:\/\/youtu.be\/vxhNviADAiE&#8221; el_width=&#8221;80&#8243; align=&#8221;center&#8221;][\/vc_column][\/vc_row]<\/p>\n","protected":false},"excerpt":{"rendered":"<p>[vc_row][vc_column][vc_column_text]L&#8217;efici\u00e8ncia dels restaurants despr\u00e9s de la Covid-19 ser\u00e0 un factor fonamental.
