Al webinar titulat &#8220;Hem d&#8217;adaptar la carta de restaurant a la reobertura?&#8221; moderat per Eva Canaleta, directora acad\u00e8mica del centre; van exposar com replantejar l&#8217;oferta gastron\u00f2mica d&#8217;un restaurant i quins aspectes cal tenir en compte en l&#8217;\u00e0rea de gesti\u00f3 per a la reobertura post Covid-19.<\/strong>[\/vc_column_text][vc_separator][vc_column_text]<\/p>\n<h2><strong>Carta i men\u00fa<\/strong><\/h2>\n<p><strong>Reduir el nombre de refer\u00e8ncies<\/strong> de la carta i dels men\u00fas; per\u00f2 <strong>donar import\u00e0ncia als cl\u00e0ssics<\/strong>, a aquells plats que s\u00f3n l&#8217;ADN del restaurant i en defineixen l&#8217;ess\u00e8ncia.[\/vc_column_text][vc_column_text]<\/p>\n<h2><strong>T\u00e8cniques culin\u00e0ries<\/strong><\/h2>\n<p>Segons els ponents, en l&#8217;anomenada &#8220;nova normalitat&#8221; hi haur\u00e0 <strong>menys participaci\u00f3 del xef a la sala<\/strong> per acabar els plats, per evitar el contacte i risc d&#8217;infecci\u00f3. &#8220;Un 20% dels plats de la carta o menys s&#8217;elaboraran <em>\u00e0 la minute,<\/em> els altres, un 80% sortiran acabats de cuina&#8221;, va apuntar Panda Gay.<\/p>\n<p>Les <strong>fitxes t\u00e8cniques<\/strong> guanyaran encara m\u00e9s protagonisme a les cuines; i es recuperaran <strong>t\u00e8cniques de cocci\u00f3<\/strong> antigues adaptades a la vida moderna, com poden ser la pasteuritzaci\u00f3.[\/vc_column_text][vc_column_text]<\/p>\n<h2><strong>Coneixement del producte<\/strong><\/h2>\n<p>La <strong>formaci\u00f3 dels xef<\/strong>s ser\u00e0 fonamental en aquesta nova etapa, van remarcar Panda Gay i Mauro Rodr\u00edguez. Ser\u00e0 imprescindible treure el m\u00e0xim profit del producte per reduir costos davant la nova situaci\u00f3. D&#8217;aqu\u00ed que el<a href=\"https:\/\/santpol.edu.es\/ca\/coneixements-de-productes-i-tecniques-culinaries\/\" target=\"_blank\" rel=\"noopener noreferrer\"> coneixement del producte i les t\u00e8cniques culin\u00e0ries <\/a>guanyin import\u00e0ncia.[\/vc_column_text][vc_column_text]<\/p>\n<h2><strong>Partides i emplatat<\/strong><\/h2>\n<p>Per controlar al m\u00e0xim la manipulaci\u00f3 d&#8217;aliments i reduir el contacte i risc de contaminaci\u00f3, Mauro Rodr\u00edguez va comentar la possibilitat &#8220;d&#8217;<strong>unir partides<\/strong> per evitar que passin per moltes mans&#8221; o b\u00e9 crear &#8220;dues brigades de cuina: una de producci\u00f3 i una altra de servei &#8220;, per exemple.
