De la seva professionalitat en dep\u00e8n, en gran mesura, l&#8217;\u00e8xit de l&#8217;establiment de restauraci\u00f3. I d&#8217;aqu\u00ed la import\u00e0ncia de la seva formaci\u00f3: la suma de coneixements i habilitats a la sala, per\u00f2 tamb\u00e9 a la cuina, s\u00f3n clau per a qualsevol persona que es vulgui dedicar al servei de sala.<\/strong>[\/vc_column_text][vc_separator][vc_column_text]<\/p>\n<h2><strong>Reprofessionalitzar la figura del personal de sala<\/strong><\/h2>\n<p>El personal de sala \u00e9s el contacte directe entre el client i l&#8217;empresa o restaurant, d&#8217;aqu\u00ed el valor i la import\u00e0ncia de la seva feina i la seva professionalitat.<\/p>\n<blockquote><p><span style=\"color: #981e32;\"><em>\u201cSi b\u00e9 \u00e9s cert que en els darrers anys la figura del cuiner s&#8217;ha professionalitzat, ara \u00e9s el moment de reprofessionalitzar la figura del personal de sala&#8221;, reivindica l&#8217;Eva Canaleta, Directora Acad\u00e8mica de l&#8217;Hotel-Escola de Sant Pol de Mar.<\/em><\/span><\/p><\/blockquote>\n<p>\u201cEls professionals de sala no s\u00f3n transportadors de plats; aquesta \u00e9s una professi\u00f3 tan lloable com qualsevol altra sempre que s&#8217;exerceixi correctament&#8221;, apunta. I per arribar a l&#8217;excel\u00b7l\u00e8ncia, un dels factors clau \u00e9s la <strong>formaci\u00f3 i la professionalitzaci\u00f3:<\/strong> &#8220;Un professional de sala en un restaurant no s&#8217;ha de notar. Si es nota, ha de ser pel seu bon fer i no per altres motius&#8221;.<\/p>\n<p>Hi ha dos elements clau que determinaran el &#8220;bon fer&#8221; del personal de sala: els <strong>coneixements sobre l&#8217;oferta gastron\u00f2mica,<\/strong> elaboracions i maridatges; i la<strong> destresa en la manipulaci\u00f3<\/strong> per poder finalitzar un plat davant del client, per el servei de sala<\/strong><\/h2>\n<p>\u201cA la restauraci\u00f3 dels anys 50 o 60, el personal de sala duia a terme diverses manipulacions davant del client que conferien valor a la seva figura&#8221;, recorda en Jordi Sala, responsable i docent del Departament de Sala de l&#8217;Hotel-Escola de Sant Pol de Mar. I explica que, si b\u00e9 \u00e9s cert que en les \u00faltimes d\u00e8cades s&#8217;ha considerat que la manipulaci\u00f3 formava part nom\u00e9s del personal de cuina, tamb\u00e9 ho \u00e9s que ara alguns restaurants de prestigi tornen a incorporar aquest rol del personal de sala.<\/p>\n<blockquote><p><span style=\"color: #981e32;\"><em>\u201cAcabar elaboracions davant del client \u00e9s un element que dona valor al personal de sala i tamb\u00e9 dona valor a l&#8217;establiment; i com aescola hem de fer \u00e8mfasi en aquesta opci\u00f3&#8221;, argument en Jordi Sala, responsable del Departament de Sala de l&#8217;Hotel-Escola de Sant Pol de Mar.\u00a0<\/em><\/span><\/p><\/blockquote>\n<p>Aix\u00ed, en les classes pr\u00e0ctiques de restaurant, l&#8217;alumnat del <a href=\"https:\/\/santpol.edu.es\/ca\/tecnic-en-gastronomia-i-restauracio\/?utm_source=blog&amp;utm_medium=post&amp;utm_campaign=servicio_sala\" target=\"_blank\" rel=\"noopener noreferrer\">Doble Cicle Formatiu en Gastronomia i Restauraci\u00f3<\/a> de l&#8217;Hotel-Escola de Sant Pol de Mar acaba algunes elaboracions davant del client. Per exemple: tallar un pollastre rostit per barrejar-lo a una amanida c\u00e8sar, desespinar i servir un llobarro a la sal, pelar taronges a la vista del client i preparar-les a l&#8217;estil del restaurant Via Veneto o b\u00e9 elaborar i servir una cr\u00eape Suzette.[\/vc_column_text][vc_images_carousel images=&#8221;53686,53683,53674,53677&#8243; img_size=&#8221;1080&#215;1080&#8243; onclick=&#8221;link_no&#8221; slides_per_view=&#8221;3&#8243;][vc_column_text]\u201cSi el personal de sala tamb\u00e9 t\u00e9 coneixements de cuina, tindr\u00e0 m\u00e9s eines per dur a terme les manipulacions correctament i acabar plats davant del client, i el mateix passa a la inversa; d&#8217;aqu\u00ed la import\u00e0ncia que des de l&#8217;Hotel-Escola donem a la <a href=\"https:\/\/santpol.edu.es\/ca\/blog\/cicle-formatiu-de-cuina-i-restauracio-dues-titulacions-en-tres-anys\/\" target=\"_blank\" rel=\"noopener noreferrer\">doble formaci\u00f3 en cuina i sala<\/a>&#8220;, argumenta en Jordi Sala. Un Doble Cicle Formatiu de Grau Mitj\u00e0 que en tres anys permet que l&#8217;alumnat obtingui una doble titulaci\u00f3: <a href=\"https:\/\/santpol.edu.es\/ca\/tecnic-en-gastronomia-i-restauracio\/?utm_source=blog&amp;utm_medium=post&amp;utm_campaign=servicio_sala\" target=\"_blank\" rel=\"noopener noreferrer\"><strong>cuina i gastronomia i serveis de restauraci\u00f3.<\/strong><\/a>[\/vc_column_text][vc_column_text]<\/p>\n<h2><strong>\u201cCuinar \u00e9s estimar, servir \u00e9s cuidar \u201d<\/strong><\/h2>\n<p><a href=\"https:\/\/santpol.edu.es\/ca\/blog\/principals-reptes-servei-de-sala-etapa-post-covid-19\/\" target=\"_blank\" rel=\"noopener noreferrer\">&#8220;Cuinar \u00e9s estimar, servir \u00e9s cuidar&#8221;<\/a> va sentenciar en Josep Roca, cap de sala i sommelier del restaurant El Celler de Can Roca en el webinar organitzat per l&#8217;EUHT StPOL. &#8220;La paraula <em>cuida<\/em>r en el servei de sala \u00e9s molt important&#8221;, apunta l&#8217;Eva Canaleta.
