Per primer cop, la guia tindr\u00e0 una categoria per valorar i visibilitzar el treball del servei de sala. Ho va anunciar M\u00f3nica Rius, directora de comunicaci\u00f3 de Michelin Espanya i Portugal, durant el debat previ a la gala que se celebrar\u00e0 a Toledo el proper 22 de novembre.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">La trobada va comptar a m\u00e9s amb diverses personalitats del sector, com <\/span><b>Marta Campillo<\/b><span style=\"font-weight: 400;\">, cap de sala del tres estrelles Michelin DiverXo i <strong>alumni d&#8217;EUHT StPOL<\/strong>; i es va parlar sobre els criteris dels inspectors de la Guia Michelin en valorar el servei de sala d&#8217;un restaurant.<\/span>[\/vc_column_text][vc_column_text]<span style=\"font-weight: 400;\">El <\/span><b>&#8216;Premi Michelin al Servei i a la Sala&#8217;<\/b><span style=\"font-weight: 400;\"> es fixar\u00e0 a \u201cla preocupaci\u00f3 pel benestar del client, pel tracte que li donen, intentar destacar l&#8217;equip o director de sala pel seu coneixement de la carta, del producte i de l&#8217;entorn i per la manera d&#8217;explicar-ho. En definitiva, pel <\/span><b>coneixement de l&#8217;art de la taula i els seus gestos t\u00e8cnics<\/b><span style=\"font-weight: 400;\">\u201d, aix\u00ed ho ha assenyalat el director de la guia a Espanya, Jos\u00e9 Vall\u00e9s.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Michelin sempre ha valorat aspectes del servei com <\/span><b>la recepci\u00f3, els emplatats, l&#8217;explicaci\u00f3 dels plats o el servei del vi<\/b><span style=\"font-weight: 400;\"> com a part del c\u00f2mput general a l&#8217;hora de puntuar amb una, dues o tres estrelles. Tot i aix\u00ed, i encara que les estrelles Michelin es donen al restaurant, i no al cuiner, la seva figura sempre s&#8217;ha endut tota l&#8217;atenci\u00f3, deixant el servei i el treball de sala en segon terme.<\/span>[\/vc_column_text][vc_single_image image=&#8221;58333&#8243; img_size=&#8221;1080&#215;657&#8243; alignment=&#8221;center&#8221;][vc_column_text]<span style=\"font-weight: 400;\">Per a Marta Campillo, <\/span><a href=\"https:\/\/santpol.edu.es\/blog\/marta-campillo-euht-stpol-alumni-premio-nacional-de-gastronomia-a-la-mejor-directora-de-sala\/\"><b>Premi Nacional de Gastronomia 2021<\/b><\/a><span style=\"font-weight: 400;\"> a la millor direcci\u00f3 de sala, \u201cla base s\u00f3n les ganes de voler millorar cada dia, per\u00f2 \u00e9s obvi que cal estar formant-se cont\u00ednuament; \u00e9s super necess\u00e0ria la formaci\u00f3 sobre plats i vins, per\u00f2 tamb\u00e9 com actuar amb el client i la formaci\u00f3 amb l&#8217;equip\u201d.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">A partir del proper 22 de novembre, cambrers, m\u00e2itres i sommeliers seran reconeguts per la seva tasca de manera espec\u00edfica. El que encara no sabem \u00e9s si hi haur\u00e0 diferents categories, si es valorar\u00e0 personalment o per equips, quants premiats hi haur\u00e0 i si es premiaran amb l\u2019apelatiu
