El nou m\u00e0ster s&#8217;adapta aix\u00ed a les darreres tend\u00e8ncies del sector gastron\u00f2mic, amb una formaci\u00f3 transversal en \u00e0mbits clau com la sostenibilitat i la cuina saludable, i potenciant la innovaci\u00f3, sota la denominaci\u00f3 de &#8220;M\u00e0ster en Arts Culin\u00e0ries, Innovaci\u00f3 i Direcci\u00f3 de Cuina&#8221;.<\/strong>[\/vc_column_text][\/vc_column][\/vc_row][vc_row][vc_column][vc_column_text]El nou m\u00e0ster d\u00b4alta cuina d\u00b4EUHT StPOL constar\u00e0 de <strong>dos semestres i dos per\u00edodes de pr\u00e0ctiques en servei de cuina<\/strong>. El primer semestre girar\u00e0 al voltant de les Arts Culin\u00e0ries i la Direcci\u00f3 de Cuina, mentre que el segon aprofundir\u00e0 a l&#8217;Alta Cuina i la Innovaci\u00f3 Culin\u00e0ria. A m\u00e9s, cada estudiant podr\u00e0 realitzar pr\u00e0ctiques internes a l&#8217;Hotel-Escola de Sant Pol de Mar i pr\u00e0ctiques externes a un restaurant de refer\u00e8ncia amb estrelles Michelin. De nou, les classes pr\u00e0ctiques segueixen sent el senyal identificatiu de la metodologia d&#8217;EUHT StPOL, ja que, en el nou pla d&#8217;estudis del <strong><a href=\"https:\/\/santpol.edu.es\/ca\/master-en-arts-culinaries-i-direccio-de-cuina\/\">M\u00e0ster en Arts Culin\u00e0ries, Innovaci\u00f3 i Direcci\u00f3 de Cuina<\/a><\/strong>, \u2018l&#8217;aprendre fent\u2019 pren m\u00e9s import\u00e0ncia que mai. Amb les sessions hands-on, les classes demostratives i els tallers, els alumnes estaran cuinant durant el 70% del m\u00e0ster. A m\u00e9s, tots els estudiants posaran a prova els seus coneixements al Restaurant Gastron\u00f2mic L\u00b4Ermita que \u00e9s el laboratori de pr\u00e0ctiques de l\u00b4Hotel-Escola de Sant Pol de Mar.[\/vc_column_text][vc_single_image image=&#8221;58958&#8243; img_size=&#8221;large&#8221; alignment=&#8221;center&#8221;][vc_column_text]Nom\u00e9s comen\u00e7ar el primer semestre, les habilitats dels nous estudiants es posaran a prova en un <strong><em>bootcamp<\/em> en un servei de cuina professional real <\/strong>al Restaurant L&#8217;Ermita, un restaurant gastron\u00f2mic d&#8217;ambient familiar que es caracteritza per la seva cuina de proximitat i de temporada amb productes marins i hortalisses de primera qualitat de la comarca del Maresme. Seran tres setmanes per avaluar a cada estudiant els seus coneixements de cuina europea, el seu exercici en servei de cuina i la seva capacitat per treballar en equip. Tot aix\u00f2 amb la intenci\u00f3 de posar-se a punt per a les primeres assignatures del primer semestre, en qu\u00e8 s&#8217;impartiran <strong>coneixements relatius a l&#8217;operativa i la gesti\u00f3 de cuina<\/strong>; com el processat de mat\u00e8ries primeres, la formaci\u00f3 de xef executiu o la ci\u00e8ncia de la cuina, totes sempre amb aplicacions pr\u00e0ctiques.[\/vc_column_text][\/vc_column][\/vc_row][vc_row][vc_column][vc_column_text]<\/p>\n<h4><strong>De la direcci\u00f3 de cuina a la innovaci\u00f3 culin\u00e0ria<\/strong><\/h4>\n<p>Vols dominar les noves tecnologies aplicades a la gastronomia, com ara la <strong>cuina molecular<\/strong>? Nitrogen l\u00edquid, cuina a baixa temperatura, esferificacions, gelatines, escumes&#8230; El semestre d&#8217;Alta Cuina i Innovaci\u00f3 Culin\u00e0ria est\u00e0 pensat per aprofundir la cuina d&#8217;avantguarda, descobrint la investigaci\u00f3 en codina en R+D+I. Cada any el programa comptar\u00e0 amb <strong><em>master classes<\/em> per grans xefs posse\u00efdors d&#8217;estrella Michelin<\/strong> i altres convidats en \u00e0mbits com ara <strong>gastrobot\u00e0nica, neurogasgronomia, intel\u00b7lig\u00e8ncia artificial aplicada a la gastronomia, gamificaci\u00f3<\/strong> aplicada a la cuina o t\u00e8cniques culin\u00e0ries com cuina molecular o amb nitrogen l\u00edquid. Tant els <a href=\"https:\/\/santpol.edu.es\/profesorado-cocina\"><strong>xefs de les <em>master class<\/em> com els seminaris<\/strong><\/a> seran conduits per experts que s\u00f3n referents a nivell nacional i internacional.[\/vc_column_text][vc_single_image image=&#8221;59010&#8243; img_size=&#8221;large&#8221; alignment=&#8221;center&#8221;][\/vc_column][\/vc_row][vc_row][vc_column][vc_column_text]<\/p>\n<h4><strong>Sostenibilitat i cuina saludable<\/strong><\/h4>\n<p>Una altra de les novetats \u00e9s la incorporaci\u00f3 de dues assignatures transversals al llarg del m\u00e0ster. D&#8217;una banda, els continguts de totes les assignatures tindran una perspectiva ecol\u00f2gica, tenint en compte els <strong>principis de sostenibilitat i economia circular<\/strong> en la gesti\u00f3 de la cuina i en la creativitat i innovaci\u00f3. Per exemple, t\u00e8cniques com l&#8217;\u00fas d&#8217;enzims per afavorir el <em>zero waste <\/em>estaran a l&#8217;ordre del dia.<\/p>\n<p>D&#8217;altra banda, el pla acad\u00e8mic aposta fort per la <strong>cuina saludable<\/strong> incorporant-hi principis de nutrici\u00f3 i les bases de la diet\u00e8tica.
