El sector gastron\u00f2mic no \u00e9s ali\u00e8 a aix\u00f2 i \u00e9s per aix\u00f2 que cada dia trobem m\u00e9s i m\u00e9s restaurants i empreses de c\u00e0terin amb una visi\u00f3 entorn de la cuina saludable i sostenible. S\u00f3n consideracions fonamentals, no nom\u00e9s pel plaer de degustar plats exquisits, sin\u00f3 per la responsabilitat d&#8217;oferir experi\u00e8ncies que nodreixin no nom\u00e9s el cos sin\u00f3 tamb\u00e9 l&#8217;\u00e0nima. Sovint, la cuina saludable ve de la m\u00e0 de l&#8217;<strong>eco gastronomia<\/strong>, que advoca per un consum alimentari responsable amb el medi ambient amb processos de producci\u00f3 on els aspectes nutritius representin la m\u00e0xima prioritat. Aquest mes hem tingut el plaer d&#8217;allotjar dues master classes de <strong>Mireia Anglada<\/strong>, experta i assessora en cuina saludable a diverses empreses del sector alimentaci\u00f3 i restauraci\u00f3, entre elles, &#8216;El Celler de Can Roca&#8217;. En elles, l&#8217;alumnat del <strong><a href=\"https:\/\/santpol.edu.es\/ca\/master-en-arts-culinaries-i-direccio-de-cuina\/\">M\u00e0ster en Arts Culin\u00e0ries, Innovaci\u00f3 i Direcci\u00f3 de Cuina<\/a> <\/strong>ha pogut fer un rep\u00e0s sobre els mites i les veritats de la Cuina Saludable, rebutjant algunes concepcions que sovint porten a conclusions err\u00f2nies.[\/vc_column_text][vc_column_text]<\/p>\n<h3><strong>Qu\u00e8 \u00e9s l&#8217;Eco Gastronomia?<\/strong><\/h3>\n<p>La ress\u00f2 gastronomia \u00e9s un estil culinari que utilitza productes del camp per elaborar receptes saludables. Es basa en l\u00fas daliments cultivats <strong>sense subst\u00e0ncies t\u00f2xiques i t\u00e8cniques origin\u00e0ries de la cuina tradicional<\/strong>. Aquesta tend\u00e8ncia culin\u00e0ria inclou gaireb\u00e9 tots els tipus de plats, per\u00f2 en la mesura del possible <strong>evita incloure aliments d&#8217;origen animal<\/strong>.<\/p>\n<p>A la gastronomia saludable tot el proc\u00e9s \u00e9s respectu\u00f3s amb el medi ambient. La sostenibilitat comen\u00e7a en la <strong>selecci\u00f3 d&#8217;ingredients<\/strong>, continua amb les t\u00e8cniques de producci\u00f3 i arriba fins a la manipulaci\u00f3 i la preparaci\u00f3, incloent-hi l&#8217;empaquetament d&#8217;aliments, que sol ser fet de materials reciclats. Des de productes locals fins a opcions org\u00e0niques, la cuina pot ser un far de pr\u00e0ctiques sostenibles. Integrar<strong> prove\u00efdors locals <\/strong>i entendre <strong>l\u2019estacionalitat<\/strong> dels ingredients s\u00f3n passos crucials.<\/p>\n<p>A m\u00e9s dels productes agr\u00edcoles, els animals tamb\u00e9 s\u00f3n tractats amb cura i respecte. Cada element a la gastronomia ecol\u00f2gica \u00e9s valu\u00f3s i es reflecteix en la import\u00e0ncia dels seus codis \u00e8tics. De fet, lelecci\u00f3 dingredients per complementar una recepta es pren molt seriosament. Per exemple, s&#8217;utilitza oli d&#8217;oliva en lloc d&#8217;oli vegetal, cosa que ofereix un millor resultat tant en l&#8217;aspecte saludable com en l&#8217;aspecte del sabor.[\/vc_column_text][vc_column_text]<\/p>\n<h3><strong>T\u00e8cniques de cocci\u00f3 saludables<\/strong><\/h3>\n<p>La manera com preparem els aliments tamb\u00e9 influeix en el seu valor nutricional. Explorar t\u00e8cniques de cocci\u00f3 que conserven els nutrients sense comprometre&#8217;n el sabor \u00e9s una habilitat essencial en la direcci\u00f3 de cuina saludable. Per exemple, cuinar amb m\u00e8todes de baixa temperatura com al vapor \u00e9s una opci\u00f3 excel\u00b7lent, ja que a m\u00e9s d&#8217;evitar aquesta p\u00e8rdua de nutrients termo\u00e0bils i de concentrar-ne el sabor, evita l&#8217;oxidaci\u00f3 i l&#8217;enranciment dels nostres productes.<\/p>\n<p>Utilitzar <strong>greixos saludables<\/strong> a la dieta pot tenir nombrosos beneficis per a la salut. Els greixos es fan servir com a font denergia i s\u00f3n essencials per al cos. Les que inclouen \u00e0cids grassos omega-3, omega-6 i omega-9 ajuden el benestar f\u00edsic i mental.<\/p>\n<p>Un altre recurs \u00e9s utilitzar <strong>enzimes i degradacions controlades<\/strong>, com els <em>burners<\/em> (cremadors). Aquests poden ajudar a reduir el malbaratament d&#8217;aliments en cuinar nom\u00e9s la quantitat desitjada, mentre que les degradacions poden ajudar a millorar el sabor dels aliments en descompondre mol\u00e8cules complexes en altres de m\u00e9s simples. Hi ha moltes maneres creatives d&#8217;utilitzar aquestes t\u00e8cniques en una cuina saludable.<\/p>\n<p>La <strong>creaci\u00f3 de men\u00fas conscients<\/strong> implica no sols la combinaci\u00f3 de sabors, sin\u00f3 tamb\u00e9 la consideraci\u00f3 de les necessitats diet\u00e8tiques individuals. Personalitzar les ofertes culin\u00e0ries per adaptar-se a diverses restriccions aliment\u00e0ries \u00e9s una tend\u00e8ncia que est\u00e0 guanyant terreny.[\/vc_column_text][vc_single_image image=&#8221;59715&#8243; img_size=&#8221;720&#215;480&#8243;][vc_column_text]<strong>Dietes eco gastron\u00f2miques<\/strong><\/p>\n<p>L&#8217;eco gastronomia \u00e9s un concepte ampli ja que abasta qualsevol expressi\u00f3 culin\u00e0ria que sigui ecol\u00f2gica i sustentable, per\u00f2 aqu\u00ed et presentem algunes de les m\u00e9s gen\u00e8riques:<\/p>\n<ul>\n<li><strong>Omn\u00edvora<\/strong>: Plats a partir d&#8217;aliments ecol\u00f2gics animals i vegetals, \u00e9s a dir, esp\u00e8cies alimentades o cultivades amb productes org\u00e0nics i naturals, sense rec\u00f3rrer ni a hormones ni a qu\u00edmics.<\/li>\n<li><strong>Vegetariana<\/strong> i vegana: Dins el menjar vegetari\u00e0 destaca l&#8217;ovolactovegetariana, una dieta que inclou llet, caf\u00e8, cereals, fruites, vegetals, entre d&#8217;altres. Quan parlem de l&#8217;estil veg\u00e0 \u00e9s estrictament el consum d&#8217;aliments 100% d&#8217;origen vegetal.<\/li>\n<li><strong>Flexitariana<\/strong>: Aquest tipus de cuina es caracteritza pel consum de vegetals. No obstant aix\u00f2, n&#8217;hi ha que alternen la seva dieta amb peix, ous i poques vegades, amb carns vermelles.<\/li>\n<li><strong>Crud\u00edvora<\/strong>: Es refereix a qualsevol aliment que pot ser ingerit sense cocci\u00f3 pr\u00e8via, la qual cosa significa que els elements que integren un plat es presentin tal com s&#8217;obtenen, per\u00f2 processats.<\/li>\n<li><strong>Eco-gastronomia macrobi\u00f2tica<\/strong>: Es caracteritza en l&#8217;elaboraci\u00f3 de plats a partir d&#8217;aliments de temporada, on destaca l&#8217;\u00fas de vegetals locals, productes del mar i cereals diversos.<\/li>\n<li><strong>Mediterr\u00e0nia<\/strong>: Se sustenta als fonaments de la Dieta Mediterr\u00e0nia, \u00e9s a dir, a partir de verdures i llegums, fruites, herbes, esp\u00e8cies, cereals, entre d&#8217;altres. Alhora, poden contenir peix, lactis o carns blanques en un proc\u00e9s de cocci\u00f3 amb oli d&#8217;oliva.<\/li>\n<li><strong>Atl\u00e0ntica<\/strong>: Una altra dieta que fa servir aliments de temporada, per\u00f2 que s&#8217;inclina cap al consum de lactis, carns de tota mena, cereals i peixos.<\/li>\n<\/ul>\n<p>[\/vc_column_text][vc_column_text]<\/p>\n<h3><strong>Economia circular<\/strong><\/h3>\n<p>A la cuina sostenible, cada ingredient compta. Es cuida la quantitat d&#8217;aliments que es fan servir i s&#8217;aprofita tot o gaireb\u00e9 tot. Aix\u00f2 es fa per evitar el malbaratament de grans quantitats d&#8217;aliments que podrien haver estat utilitzats per a altres prop\u00f2sits. Estrat\u00e8gies per reduir el malbaratament, com l&#8217;\u00fas creatiu de parts menys convencionals dels aliments i la planificaci\u00f3 acurada, s\u00f3n aspectes crucials d&#8217;una direcci\u00f3 de cuina ecoconscient.<\/p>\n<p>A la seva <em>master class<\/em>, <strong>Mireia Anglada<\/strong> va formular alternatives veganes al que la ind\u00fastria comercialitza a trav\u00e9s de diversos exemples pr\u00e0ctics. No nom\u00e9s ofereix coneixements profunds sobre nutrici\u00f3 i t\u00e8cniques culin\u00e0ries saludables, sin\u00f3 que tamb\u00e9 aborda la import\u00e0ncia de la sostenibilitat a cada creaci\u00f3 gastron\u00f2mica. Al cor de cada plat hi ha l&#8217;oportunitat d&#8217;impactar positivament a la salut i al planeta.<\/p>\n<p>Al M\u00e0ster, amb <strong>m\u00e9s del 70% de classes pr\u00e0ctiques<\/strong>, aquests conceptes no nom\u00e9s s&#8217;ensenyen, es viuen.
