His restaurant, Lluerna, was one of the first in the area of \u200b\u200bBarcelona to join the slow food philosophy.<\/strong><\/h2>\n<p>&nbsp;<\/p>\n<p>\u201cWe started with slow food when it was not yet known,\u201d says V\u00edctor Quintill\u00e0. In fact, during the <strong>masterclass <\/strong>taught with the students of the<a href=\"https:\/\/santpol.edu.es\/en\/master-in-culinary-arts-and-kitchen-management-english\/\" target=\"_blank\" rel=\"noopener noreferrer\"> <strong>Master in Culinary Arts and Kitchen Management<\/strong> <\/a>of EUHT StPOL, Quintill\u00e0 has detailed the pillars of the kitchen that they carry out in the<span  class=\"ofus \" data-loc=\"aHR0cHM6Ly9sbHVlcm5hcmVzdGF1cmFudC5jb20v\" data-window=\"new\"><strong> restaurant Lluerna<\/strong><\/span>: \u201cWe work directly with local producers, we look closely at the product traceability \u201d. Promoting the consumption of local and seasonal products, buying directly from the producer and using products with ecological certification are some of the axes that define <strong>slow food restaurants<\/strong>, such as Lluerna. \u201cWe are one of the historical slow food restaurants in Barcelona; when we opened, in 2001, there was only one restaurant that finally has closed; nowadays we are about 35 restaurants in Barcelona and about 60 in Catalonia; it&#8217;s a booming movement\u201d, says Quintill\u00e0.<\/p>\n<blockquote><p><strong>In 2012 the restaurant Lluerna got the first Michelin star<\/strong>, which they have maintained until today. His project: &#8220;We make a cuisine with Catalan roots, based on traditional flavours and trying to surprise with everyday life, which forces us to use ingenuity,&#8221; explains the chef.<\/p><\/blockquote>\n<p>In the masterclass of V\u00edctor Quintill\u00e0, the chef has presented different dishes that can be tasted in the restaurant Lluerna as:<em> escudella<\/em> and Catalan stew, Maresme peas and their suffl\u00e9 or hare \u00e0 la Royale, among others.[\/vc_column_text][vc_gallery type=&#8221;flexslider_slide&#8221; interval=&#8221;3&#8243; images=&#8221;43880,43877,43874,43871,43868,43860&#8243; img_size=&#8221;960&#215;750&#8243; onclick=&#8221;&#8221;][vc_column_text]<\/p>\n<h3><strong>Experts and chefs with Michelin stars in the master&#8217;s teaching team<\/strong><\/h3>\n<p>Quintill\u00e0 is the chef of Lluerna restaurant in Santa Coloma de Gramenet (Barcelona), which has a Michelin star and two Soles Repsol; and from the Verat bar, a tapas restaurant opened in 2019 and adjacent to Lluerna restaurant. His master class is part of the <strong>sessions taught by experts and chefs with Michelin stars<\/strong> for students of the <a href=\"https:\/\/santpol.edu.es\/en\/master-in-culinary-arts-and-kitchen-management-english\/\" target=\"_blank\" rel=\"noopener noreferrer\"><strong>Master in Culinary Arts and Kitchen Management<\/strong> <\/a>at EUHT StPOL.<\/p>\n<p><a href=\"https:\/\/santpol.edu.es\/en\/blog\/cooking-the-landscape-from-el-celler-de-can-roca-evarist-march-brings-gastrobotany-to-the-students-of-the-master-in-culinary-arts-and-cooking-management\/\" target=\"_blank\" rel=\"noopener noreferrer\">Evarist March, gastrobotanic in El Celler de Can Roca<\/a>; or chefs like Oriol Castro, Mateu Casa\u00f1as and Eduard Xatruch of the restaurant Disfrutar Barcelona &#8211; 2 Michelin stars and number 9 on the list of <a href=\"https:\/\/santpol.edu.es\/en\/blog\/the-oscars-of-the-food-world-what-connection-do-they-have-with-euht-stpol\/\"
