The Menorcan chef Pau Sintes awarded the winner out of a total of 9 finalists<\/b>[\/vc_column_text][vc_column_text]<span style=\"font-weight: 400;\">This weekend the 6th <a href=\"https:\/\/www.europeanyoungchefaward.org\/\"><strong>European Youth Chef Award (EYCA)<\/strong><\/a> took place at the Strinda school in Trondheim-Tr\u00f8ndelag (Norway), European Region of Gastronomy 2022, in which our student Ra\u00fal Gisbert competed after winning the <a href=\"https:\/\/santpol.edu.es\/en\/blog\/raul-gisbert-euht-stpol-student-winner-catalan-young-chef-award\/\"><strong>Catalan Young Cuisine Award<\/strong><\/a> last April.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Despite doing a great job and surprising all the members of the jury with his reinvention of the Catalan aperitif concept, his performance was not enough to win the prize, which went to the Menorcan chef <strong>Pau Sintes<\/strong>. The Top3 was occupied by <\/span><strong>S\u030cpela Kuhel <\/strong><span style=\"font-weight: 400;\">from Slovenia and <\/span><strong>Ivar Follinglo Moe <\/strong><span style=\"font-weight: 400;\">from Trondheim-Tr\u00f8ndelag in 2nd and 3rd place respectively.<\/span>[\/vc_column_text][vc_single_image image=&#8221;58300&#8243; img_size=&#8221;large&#8221; alignment=&#8221;center&#8221;][vc_column_text]<\/p>\n<h2><strong>&#8220;Vermut en tres mossegades&#8221;:<\/strong><strong> the recipe with the highest overall score<\/strong><\/h2>\n<p><span style=\"font-weight: 400;\">Ra\u00fal, who is currently enrolled in the<\/span> <a href=\"https:\/\/santpol.edu.es\/en\/technical-degree-in-gastronomy-and-restaurant-service\/\">Technical Degree in Gastronomy and Restaurant Services<\/a><span style=\"font-weight: 400;\"> at EUHT StPOL, presented a culinary proposal titled &#8220;Aperitif in 3 bites&#8221;, an innovative approach to the Catalan appetizer of crisps, mussels in brine and anchovy-stuffed olives.<\/span>[\/vc_column_text][vc_single_image image=&#8221;58315&#8243; img_size=&#8221;large&#8221; alignment=&#8221;center&#8221;][vc_column_text]<span style=\"font-weight: 400;\">At the start of the event, the 9 contestants presented the traditional versions of their dishes, while the following day was the actual competition session. Ra\u00fal&#8217;s proposal consists of integrating the different elements into a single dish: the crisps become a <strong>potato cannellone covered in olive oil jelly<\/strong> with a crispy potato biscuit and a powdered spice to emulate the brava sauce. <strong>The mussels appear in the form of pannacotta<\/strong> and the <strong>stuffed olives become a tapenade<\/strong> emulating their natural form, accompanied by fresh cockles. All this is bound by salty olive oil ice cream.<\/span>[\/vc_column_text][vc_gallery interval=&#8221;3&#8243; images=&#8221;58312,58309,58306,58303&#8243; img_size=&#8221;large&#8221; onclick=&#8221;&#8221;][vc_column_text]<\/p>\n<h2><strong>#EYCA22 by IGCAT<\/strong><\/h2>\n<p><span style=\"font-weight: 400;\">The EYCA is an award organized by the <strong>Institute of Gastronomy, Culture, Art and Tourism (IGCAT)<\/strong>, a non-profit entity that aims to empower local communities through the promotion of their cultural idiosyncrasies and the establishment of cooperation networks between regions. In addition to the young cuisine category, IGCAT also promotes the European Region of Gastronomy Award, the World Food Gift Challenge or the Food Film Menu, among other contests, and holds the official secretariat of the <strong>European Regions of Gastronomy<\/strong>.<\/span>[\/vc_column_text][vc_column_text]<span style=\"font-weight: 400;\">The participation of the representative of Catalonia in the European Young Chef Award (EYCA) is promoted by PRODECA and the Ag\u00e8ncia Catalana de Turisme, as members of the<\/span><a href=\"https:\/\/www.europeanregionofgastronomy.org\/\"> <span style=\"font-weight: 400;\">European Regions of Gastronomy<\/span><\/a><span style=\"font-weight: 400;\">.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">The first two editions of the EYCA were held at the <strong>EUHT StPOL&#8217;s Hotel-School<\/strong> and since then, each edition has been hosted in the European Region of Gastronomy of that given year. In 2023, the French <strong>Hautes-de-France<\/strong> region will be the European Region of Gastronomy and hence, it will host next year\u2019s edition of the EYCA contest.<\/span>[\/vc_column_text][\/vc_column][\/vc_row]<\/p>\n","protected":false},"excerpt":{"rendered":"<p>[vc_row][vc_column][vc_column_text]Our student Ra\u00fal Gisbert represented Catalonia in the contest celebrated in Norway.
